Quail A name for several genuses of small, plump game birds of the pheasant family, recognized for their curved crown feather. They eat principally seeds, but they will also eat plant parts and insects. Although capable of short bursts of flight, most are terrestrial birds, nesting on the ground. In contrast, Common and Japanese Quail are migratory. Quail are found widely throughout New Mexico, especially in areas with cover. A Personal Note: I have often had the pleasure of watching a quail family scurry across the road near our home. They seemed to literally come from nowhere, and disappear into nowhere! (~Aimee) Quesadilla A favorite snack of Mexico and the Southwest, quesadillas are a blend of Old World traditions with new foods and techniques. The form taken varies by region. In Mexico, a quesadilla is an uncooked tortilla stuffed with cheese, folded to make a turnover, and fried on a griddle. More often in the Southwest (including New Mexico) a quesadilla is a flat tortilla covered with cheese and toasted in an oven.
